Varietals: Pinot Noir and Syrah
Vintage Notes: 2023 was a small, high-quality vintage in the Yarra Valley. The season was defined by a cool Spring, a mild growing season, cool nights, and lots of rainfall. 2023 was one of the coolest and latest harvests on record, with our first pick starting two and a half weeks later than previous average. The grapes in 2023 had lovely fruit concentration with bright natural acidities.
Vinification: Hand-picked, whole bunch pressed taking only the fresh free run. The clear juice was then racked to a stainless-steel tank for a long cool ferment before being matured on ferment lees until bottling in July.
Food Pairing: Drink by itself while sitting in the sun. Drink it out of enamel cups at the beach with salty piping hot fish and chips. Crab sangas on white bread with mayo and dill. A Thai feast of satay chicken, with steamed rice and a zippy, spicy papaya salad. Grilled anchovies on toasted bruschetta with tomatoes.
