Day 2 – Friday 30 January 2026
The Women of the Coal River Valley
After a nourishing breakfast at the hotel, we head out into the rolling hills of the Coal River Valley – one of Tasmania’s most exciting wine regions and home to some of the country’s leading female winemakers.
First stop: Stargazer Wines. At her brand-new cellar door, Sam Connew greets us with her signature wit and deep winemaking wisdom. A trailblazer of the Tassie wine scene, Sam brings a sharp intellect and fearless energy to everything she touches. Taste through her vibrant,
textured wines and hear the story behind Stargazer – a label born of a wild leap and a love for this rugged land.
Next: Torchbearer Wines. We visit the elegant Anh Nguyen, co-founder and winemaker at Torchbearer, one of Tasmania’s most exciting new names and one of the state’s few biodynamically farmed vineyards. Anh brings both scientific precision and heartfelt creativity to her wines, with a fierce commitment to sustainability and quality. Her tasting is intimate, personal, and deeply inspiring.
Lunch & tasting: Tolpuddle Vineyard. The name needs no introduction, but today’s visit is extra special – we’re joined by Pip Anderson, Tolpuddle’s Tasting Room Manager and one of the wine industry’s shining stars. Pip will guide us through a light lunch and tasting of Tolpuddle’s iconic Chardonnay and Pinot Noir, sharing insights into crafting wines that are as refined as they are powerful.
We then return to Hobart late afternoon for a little rest and glam-up time.
Dinner: A Five-Course Celebration at Mures Upper Deck. Perched above the waterfront, Mures is a multi-generational family-owned business synonymous with Tasmanian seafood – and tonight, the views are as breathtaking as the food. Over five exquisite courses, we’re joined by special guest Greer Carland of Quiet Mutiny. Greer’s wines – like her – are complex, elegant and just a little rebellious. A seasoned winemaker now doing things on her own terms, she’ll share her story of independence, creativity and calm defiance.
Meals included: Breakfast, Lunch, Dinner
Day 3 – Saturday 31st of January
Markets, Mona & Martini Magic
Enjoy breakfast at the hotel and then the morning is yours to explore – and there’s no better way to soak up Hobart’s soul than at the iconic Salamanca Markets. Browse artisan crafts, sample local fare, or simply wander with a coffee in hand under the shade of century-old trees. Late morning, we board the Mona Ferry and cruise upstream to the wild world of Mona.
We’ll begin with a leisurely lunch at The Source, where seasonal ingredients meet artistic flair and the Tassie-focused wine list is as thoughtful as the art. After lunch, you’re free to roam the galleries, installations and subterranean wonderland at your own pace. Return to Hobart via ferry and freshen up for our final dinner…
Our final night is one for the senses. At the award-winning Institut Polaire, we meet Louisa and Nav Singh – the powerhouse duo behind Süd Polaire spirits and Domaine Simha wines. This intimate space is a temple to cold-climate elegance: think crisp martinis made with Antarctic dry gin, ethereal Pinot Noir and fine fare that’s as beautiful as it is delicious. With accolades from Gourmet Traveller and Good Food Guide under their belt, Lou and Nav share their journey of chasing beauty in everything they do – from the vineyard to the distillery to the plate.

Farewell Feasting in the Valley
One last hotel breakfast, and it’s time to check out of the hotel before we journey back out to the vines for a grand finale.
Morning Tasting: Pooley Wines. In the shadow of the historic Belmont House, we meet the magnetic Anna Pooley – one of Australia’s most respected and awarded winemakers. With deep roots in this third-generation family estate, Anna blends tradition and innovation in every bottle. Expect a masterclass in site expression and a tasting that lingers on the palate – and in the mind.
Just across the road, we settle in for a final, long-table lunch at Prospect House – an 1830s Georgian manor turned refined country escape. With a menu drawn from their own gardens and orchards, it’s the perfect setting for heartfelt toasts, laughter- filled farewells, and a final sip of Tasmania’s cool-climate magic.
We then transfer to Hobart Airport. Departing with full hearts, clinking suitcases, and new friendships formed over fine wine
