The 4 best wine cocktails for summer

It may come as no surprise to learn that our favourite cocktails are those that involve wine! But which ones are the best for dealing with the summer heat? For providing intense refreshment? For making your backyard pool seem like an Ibiza playground? Well, we argued and sipped and mixed until we arrived at our favourite four wine cocktails for summer. Here they are.

Moscato Lemonade with Strawberry & Basil

Moscato really shines in cocktails and it’s low in alcohol, so consider this the summer morning ‘coffee’ break you’ve been waiting for.

  • 180ml Moscato
  • 4 ripe strawberries
  • 1 teaspoon sugar
  • 4 basil leaves
  • 30ml fresh lemon juice

Blitz the strawberries, sugar, basil and lemon juice together until well blended. Strain into a tall glass that’s half filled with ice. Add the moscato and stir. Find a pool to sit by!

Pomegranate and Vanilla Sangria

It’s hot. You don’t want to go back to work tomorrow. Let’s pretend we’re all on holidays and whip up this jug of delicious, refreshing sangria to share shall we?

  • 1 orange, sliced
  • 1 apple, chopped
  • 1 nectarine, chopped
  • the seeds of 1 pomegranate
  • 2 cinnamon sticks
  • 2 vanilla beans
  • 1 1/2 bottles of sparkling red wine
  • 2 cups of pomegranate juice
  • 1/2 cup brandy
  • 1/4 cup sugar

Add fruit and cinnamon sticks to a large glass jug. Pour wine, pomegranate juice, brandy and sugar over the top. Scrape vanilla beans out of their pods and add to the mix. Then throw the empty vanilla beans in. Mix with a large spoon to really combine everything.

Place in the fridge for about 1 hour before serving to allow the flavours to infuse. When ready, add plenty of ice into the jug then pour into glasses.

The Stargazer

You could wait until night falls, but it’s always 5 o’clock somewhere, right?

  • 60mls unoaked (or lightly oaked) young Chardonnay
  • 30mls dark rum
  • 1/2 teaspoon vanilla bean paste
  • 15mls pineapple juice
  • slice of lime for garnish

Combine all ingredients in a cocktail shaker filled with ice. Shake then strain into a tall glass and garnish with lime.
