Description
This new wine is a super fun addition to the Sapling Yard family of wines. It has a base of our Four Pinots and Friends – dried strawberry and fresh cut pear aromas, the fruits giving a hint of sweetness, and a lovely fresh tangy acidity and a textural component – with a slight sparkle to it. Make sure it’s chilled before you pop the top, you may see a slight gushing of the wine, but this a normal response to a wine that has gone through secondary fermentation in the bottle.
The grapes were hand picked by a small team including the winemakers. Varieties include: Pinot Gris from Boorowa, Pinot Noir from Tumbarumba, Pinot Meunier from Lake George and Pinot Blanc from the Sapling Yard Vineyard in Braidwood.
Let’s talk about this adorable label! Carla’s 16 year old daughter, Erin, is a very talented artist and their family’s love of animals was the inspiration for the label – here we introduce you to Pet the Dog and Nat the Cat.
50% wild ferment in French oak along with 50% stainless steel – fermented til dry then bottled into a sparkling bottle and left to go through secondary fermentation.
Food matches: all of the cheese and charcuterie boards, and maybe some summer salads, but drink it mostly with friends and sunshine.

Production: 60 Dozen
Vinification: All the grapes were crushed, destemmed and pressed to tank. 50% was racked to older French oak barrels for a natural ferment and 50% was tank fermented with a specially selected yeast. Just before the end of ferment we racked a portion of barrel ferment and tank ferment which we then chilled and let settle . We bottled to finish the secondary fermentation as our very First Pet Nat.
