The Sangiovese grapes for this wine were harvested from two vineyards; Grove Estate in the Hilltops and Tumblong Estate in the Gundagai region. Both sites produce excellent Sangiovese, perfect for our lighter styled Rosé.
The grapes were pressed as whole bunches directly into stainless steel tanks and then clarified. An aromatic yeast strain was used for fermentation with emphasis on its ability to ferment at low temperatures and with a clean, fruit-driven profile. The wine was fined and filtered prior to bottling.
