Description
This wine has a dried strawberry and fresh cut pear aroma, a dry wine with fresh acidity and a textural component.
The grapes were hand picked by a small team including the winemakers. Varieties include: Pinot Gris from Boorowa, Pinot Noir from Tumbarumba, Pinot Meunier from Lake George and Pinot Blanc from the Sapling Yard Vineyard in Braidwood.
50% wild ferment in French oak along with 50% stainless steel ferment.
Food matches: Asian dishes with a little heat, smoked salmon salad and grilled prawns.

Production: 320 Dozen
Vinification: All the grapes were crushed, destemmed and pressed to tank . 50% was racked to older French oak barrels for a natural ferment and 50% was tank fermented with a specially selected yeast. The barrels, once finished fermenting, were stirred on lees for 2 months. The wine was racked together where it was gently fined and filtered before being bottled in June 2022.
