Perfect Oysters for the Champagne Party Season

The party season is officially upon us!

Champagne is a must in any celebration. But that got me thinking, what else is a must?  Only one word sprang to mind – Oysters!

I love Oysters but I used to only ever have them when I was out a fancy restaurant.

They were one of those foods that I was honestly a bit scared to do myself at home, whether it was a fear of getting them wrong, or poisoning my guests, I am not sure. 

Looking back I think that’s crazy because oysters are so simple. They literally ‘do’ themselves.  Be confident, find a fish monger you trust and oysters will be a regular in your home this summer.

There are lots of really nice and easy ways to serve up oysters. Here are two of my favourites.

All you need is one dozen fresh oysters laid over crushed ice and any of the following:

1. Oysters Asian Style – one chilli finely chopped, 1 teaspoon of grated ginger, juice of half a lemon and 6 teaspoons of rice wine vinegar.  Mix together and drizzle a little over each oyster

2. Spicy Oysters – Shake a little Tabasco sauce over each oyster. Juice two limes, 1 tablespoon of chopped coriander and one of mint, one clove of garlic crushed.  Mix together and pour over oysters

These are so easy it isn’t really cooking. It’s almost cheating!
